This May, Jonathan Machado and I had the pleasure of working in Guyana, South America. Neither one of us had ever been to this unique country located just north of Brazil and east of Venezuela. The most interesting part of this experience was immersing myself within the heterogeneous, mixed demographics. The ethnic groups are Indian, African, European, Chinese, and the Indigenous. The two largest are the Indo-Guyanese (from India) and Afro-Guyanese (from Africa). So, you get to see beautiful Indian architecture and dance to Caribbean rhythms all in one place. We got to eat Creole and Curry dishes, share laughs with our new friends Ryan and Jermaine, and of course document the entire trip. May 30, 2012. Alicante, Spain. “Tapas” are small servings of spanish dishes that are typically shared amongst the table. A popular tapa in Alicante is “Sobrasada Iberica y Miel”. Sobrasada is a typical Spanish Mediterranean sausage, one of the many ways to enjoy it is with bread and drizzled honey.

Shawnee can be described as a modern hippie. She has been living in her tree house paradise located in North Miami. Although she owns a house on the same land where the tree house is located, she chooses to rent it out to college students attending the FIU Biscayne campus instead. “I don’t like to feel confined by concrete walls, I just love my openness and being this close to nature.” She also manages her own business, Shawnee’s Green Thumb Popcorn, a healthy snack she’s been making for years.
